Cooking the Bird

There are several collections of medieval recipes in existence, both in printed form and online; this blog has referenced them before. A new one may be making its way into the world soon. And by "new" I mean one that is very old.

Earlier this year, a researcher at Cambridge* discovered, while looking at a 12th century manuscript on medicines from Durham Cathedral, what she realized was a series of recipes that were culinary, not medicinal. The manuscript was produced about 1140, making these recipes the earliest known in Medieval England, predating any others previously discovered by about 150 years.

One of the recipes might be worth trying for Thanksgiving:
For “hen in winter’: heat garlic, pepper and sage with water.
This terseness is typical of medieval recipes. My linking of it with Thanksgiving is explained by the following:
The recipes are for sauces to accompany mutton, chicken, duck, pork and beef. There’s even a seasonal version of the chicken recipe, charmingly called “hen in winter”. We believe this recipe is simply a seasonal variation, using ingredients available in the colder months and specifying “hen” rather than “chicken”, meaning it was an older bird as it would be by that time of year. The sauces typically feature parsley, sage, pepper, garlic, mustard and coriander which I suspect may give them a middle eastern, Lebanese feel when we recreate them. According to the text, one of the recipes comes from the Poitou region of what is now modern central western France. This proves international travellers to Durham brought recipes with them. [source]
The Blackfriars Restaurant in Newcastle attempted to recreate the sauces and dishes in April 2013. Ultimately, an analysis of the manuscript and the refined recipes themselves will be published, giving us more insight into the medieval diet, cultural practices, and perhaps even international communication and trade.

A Medieval Thanksgiving

In a document of 1051, the former Queen of Poland, Richeza, grants to her nephew, the palatine count Henry I, the possession of Cochem Castle. This is the first reference to Cochem Castle, which is believed to have been built about the year 1000.

Rising over 300 feet above the Moselle River, it was built with 12-foot thick walls enclosing an original 17x17-foot square keep in the Romanesque style. There is evidence of rebuilding/expansion around 1056, presumably by count Henry. King Konrad III (1093-1152) took control of the castle from the palatinate counts (who asserted extensive control locally), turning it into a castle under the rule of the king. The castle continued to change hands, however, finally ending up occupied by Louis XIV, the Sun King, in 1688. French troops destroyed the town and the castle with explosives in 1689. It lay in ruins until 1868, when it was purchased by a businessman who began rebuilding it in the neo-Gothic style as a summer residence.

Now, however, it is owned by the town of Cochem and managed as a tourist attraction by Reichsburg Cochem Ltd. Besides tours, one of the chief attractions is the restaurant, open daily until 6:00pm. They also offer a Medieval Feast, a four-hour event in which you eat with your hands and are entertained by jesters. These dinners are offered on Friday and Saturday evenings.

Which means that the feast hall is available on Thursday nights, especially in late November, when Americans celebrate Thanksgiving. If you are American military personnel stationed in Germany, you can take part in a USO-organized Medieval Thanksgiving Dinner at Cochem Castle. For $99/person, you get transportation to the castle with a USO guide, a tour of the castle, the aforementioned Medieval Feast, plenty of food, two drinks, entertainment, and a knighting ceremony at the climax of the evening.

By the time you read this, it will be too late to join (maybe), but you can always start planning for the future.

Marshmallow

Yes, marshmallow. (Maybe Halloween has put me in mind of sweets.)

Althaea officinalia (the "marsh mallow") is a perennial that grows wild in salty marshes. Egyptians discovered that the root contained a sweet sap that could be used to sweeten cakes. The delicacy was reserved for Pharaohs.

The Greco-Roman world embraced the substance in mallows and believed it had medicinal value. The 1st century Dioscorides (cribbing from Pliny) wrote:
boiled in ... wine or chopped on its own, it works against wounds, tumors of the parotid gland[*], swellings in the glands of the neck, abcesses, inflamed breasts, inflammations of the anus, bruises, swellings, tensions of the sinews ... It works also against dysentery, blood loss and diarrhoea. [Hippocratic Recipes: Oral and Written Transmission of Pharmacological Knowledge in Fifth- and Fourth-century Greece, p.264]
Medieval Europe, willing to try anything suggested by the Classical world, discovered how sweet the mallow concoctions were and started using them as a sweet treat—with the bonus of them being healthful. An Italian cookbook of the 1400s—De Honesta Voluptuate et Valetudine [On Right Pleasure and Good Health], by Bartolomeo Platina—suggested several ways to season the substance. Medieval monks grew the mallow for its sweetness and medical properties. Herbalists turned it into treatments for sore throats and coughs, indigestion and toothache.

The marshmallow sap was used for liquids in the Middle Ages; it was 19th century French confectioners who whipped it into a solid candy by mixing it with egg whites and corn syrup. Nowadays it can be made without any recourse to the mallow plant. Wassail!

We don't talk enough about Anglo-Saxon, but the Yule season and Christmas traditions evoke Old English images and customs (at least, in the Western Hemisphere) rather than Latin/Roman culture. So let's talk about wassail.

Wassail was originally spelled Wæs hæl ("Be hale/healthy!" [pronounced with short a, to rhyme with lass gal]). The "modern" spelling became current in the late 12th/early 13th century. It is not only an imperative to be well, but also the drink used to toast each other's health in the bleak midwinter. Ralph Holinshed (1529-1580) in his Chronicles quotes a story from Geoffrey of Monmouth's (c.1100-c.1155) Historia Regum Britanniæ (History of the Kings of Britain):
A great supper therefore was prepared by Hengist at the which it pleased the king [Vortigern] to be present, and he [Hengist] appointed his daughter [Rowen], when every man began to be somewhat merry with drink, to bring in a cup of gold full of good and pleasant wine, and to present it to the king saying; “Wassail.” Which she did in such comely and decent manner, as she that knew how to do it well enough, so as the king [Vortigern] marveled greatly thereat, and not understanding what she meant by that salutation, demanded what it signified. To whom it was answered by Hengist, that she wished him well and the meaning of it was, that he should drink after her,...
Currently, many who make wassail start with red wine, but originally it was based on heated cider or ale with spices and fruit thrown in. Ale or cider mixed with sugar, cinnamon, and nutmeg was common. The hot concoction would have toasted bread tossed on it to sop up the liquid for easy consumption. A traditional carol alludes to this:
Wassail! wassail! all over the town,
Our bread it is white and our ale it is brown;
Our bowl it is made of the white maple tree;
With the wassailing bowl, we'll drink to thee.

Time To Talk of Cheese

Warm up some milk, add an acidifying agent, let it cool, drain off the whey to leave the curds, and the result is cheese. We don't know who first made cheese—the best guess is that milk stored in a vessel made from the stomach of a ruminant became cheese accidentally—but it has been around for thousands of years.

The Romans loved cheese—especially fresh goat cheese—and Pliny has much to say about the different kinds from different parts of the Empire. As cheese-making spread—often by the expansion of Roman culture into Europe—local varieties developed due to differences in climate and bacteria.

Cheese was a good addition to the Christian diet, since it was protein-heavy and could be consumed on days when meat was not allowed. A Monk of St. Gall (identified as Notker the Stammerer) wrote a biography of Charlemagne called De Carolo Magno (On Charles the Great), full of glorifying anecdotes. It has a revealing story about the emperor that involves cheese:
Now on that day, being the sixth day of the week, he was not willing to eat the flesh of beast or bird; and the bishop, being by reason of the nature of the place unable to procure fish upon the sudden, ordered some excellent cheese, rich and creamy, to be placed before him. And the most self-restrained Charles, with the readiness which he showed everywhere and on all occasions, spared the blushes of the bishop and required no better fare: but taking up his knife cut off the skin, which he thought unsavoury, and fell to on the white of the cheese. Thereupon the bishop, who was standing near like a servant, drew closer and said, "Why do you do that, lord emperor? You are throwing away the very best part." Then Charles, who deceived no one, and did not believe that anyone would deceive him, on the persuasion of the bishop put a piece of the skin in his mouth, and slowly ate it and swallowed it like butter. Then approving of the advice of the bishop, he said: "Very true, my good host," and he added: "Be sure to send me every year to Aix two cart-loads of just such cheeses." [Book I, Chapter 15]
We cannot say which variety of cheese tickled Charlemagne's palate. Gorgonzola is mentioned in 879, and cheddar around 1500, but we don't know if 9th century Gorgonzola or 16th century Cheddar tasted the same as the varieties we eat today.

Apple Pie

Someone suggested to me recently that I should offer a recipe from the Middle Ages. I was thinking about Tartletes (meat tarts) that I have made and enjoyed, but the crisp autumn weather practically begs for the following.

A few months ago I talked about a manuscript that survives from the kitchen of Richard II. This cookbook, The Forme of Cury (The Forms of Cooking), has dozens of recipes that have been translated and tweaked by modern scholars and cooks to turn them into dishes acceptable to the modern palate. Tweaking is necessary, since precise measurements are rarely included. For instance, here is the recipe for an apple pie:
XXVII For to make Tartys in Applis.
Tak gode Applys and gode Spycis and Figys and reysons and Perys and wan they are wel ybrayed colourd with Safron wel and do yt in a cofyn and yt forth to bake wel.

27. To make Apple Tarts
Take good Apples and good Spices and Figs and raisins and Pears and when they are well cut up (and) well-colored with saffron, put them into a coffin and set it forth to bake well.
Only a few years before Richard's cookbook was made, the "apple coffin" was first recorded. We would call it a pie with a top crust, but in this case the "coffin" was made of dough that was probably not very tasty. If we can rely at all on the proportions shown in woodcuts and illustrations, it was taller relative to its base than modern pies. Basically, it was a delivery method for the delicious filling, and the coffin itself would not be eaten. Now we are accustomed to eating the whole dish, so crust-making methods have developed differently over the ages.

Here is how one modern cooking expert has interpreted this recipe:*
8 large Golden Delicious apples, peeled, cored and sliced
4 Bartlet pears peeled, cored and sliced
½ cup of raisins
½ cup of figs, sliced
2 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
¼ tsp cloves   
a pinch of saffron
This would make a very different flavor than the typical "American" apple pie. For one thing, Golden Delicious apples, not generally used for baking, are chosen because of their similarity to an old variety that would have been available to medieval cooks. If you recall this recent post on sugar, you'll remember that it was difficult to come by and not an easy inclusion in a recipe. Also, "sweets" had been made and served for centuries without the addition of sugar, relying on the addition of honey or simply the natural sweetness in the fruit. If you are interested in trying this recipe, I suggest falling back on a modern recipe for the crust that suits you.

The next time you hear the phrase "As American as apple pie," think about its long pre-American history.

Sugar, Short & Sweet

In a few parts of the world today, children are gorging on their haul of candy from trick-or-treating last night. The makers of candy out-do themselves yearly in producing variations on sugar and chocolate and color and texture, et cetera. But there is hardly anything in children's sacks and plastic jack-o-lanterns today that does not contain sugar.

It was soldiers of the Persian Emperor Darius who reported finding, near the Indus River in 510 BCE, reeds which produced honey without bees. Nothing was made of this discovery, but Alexander the Great in 327 BCE learned of it and spread the knowledge to the Mediterranean. By 95 CE, this substance was well-known to the point where the Periplus Maris Erythræi (Guidebook to the Red Sea) could say there is "Exported commonly ... honey of reeds which is called sakchar." Not only may this be the first recorded evidence of sugar cane, it is probably also the origin of the later term saccharine.

But let's skip a bit to the European Middle Ages. According to one scholar, the Muslim conquest of Sicily would have introduced sugar to the West:
"Practically all the distinguishing features of Sicilian husbandry were introduced by the Arabs: citrus, cotton, carob, mulberry, both the celso, or black and the white morrella-sugar cane, hemp, date palm, the list is almost endless." — The Barrier and the Bridge-Historic Sicily, Alfonso Lowe (1972)
When William II of Sicily (1155-1189) built the Benedictine Abbey of Monreale and made it the largest landowner in Sicily after the Crown, it became one of the largest manufacturers of processed sugar in Europe.

Sugar was wonderful, like honey before it. It could be used to sweeten food, make medicine more palatable, and produce new kinds of drinks. It also could add a decorative touch to food: either by adding sparkle to fruit dusted in sugar crystals, or by caramelizing to a lovely brown on cooked foods.

Still, sugar was not as common as everyone would have liked. In 1226, Henry III (1207-1272) had difficulty finding 3 whole pounds needed for a banquet. Before long, however, production and trade must have increased, because only a generation later, in 1259, Henry could have bought that pound of sugar for only 12 shillings (ginger was 18 shillings, and a pound of cumin was only 2).

Richard II's Feast

In 1390, King Richard II of England had his master chefs assemble a book of all their best recipes. This Forme of Cury (Forms of Cooking) was interesting enough that an edition was presented to Queen Elizabeth I. In 1975, Lorna J. Sass took the edition printed for the Early English Text Society* recipes and not only translated the recipes into Modern English (to the best of her understanding, given the imprecision of the directions), but also tested the recipes to determine proportions of ingredients that would result in dishes acceptable to the modern palate.

On September 23, 1387, Richard held a feast, the details of which are given. The pomp and ceremony started at 10:30, followed by:
  • Venison with furmenty (a sauce of boiled wheat)
  • A potage called Viaundbruse (a broth with choice meats)
  • Heads of Boars
  • Great haunches of roasted meat
  • Roasted swans
  • Roasted pigs
  • Custard with dried fruit, parsley and bone marrow in a crust
  • A subtlety (a decorative piece of food)
...and that was the first course. Eleven more dishes followed—mostly meats—and then a subtlety. Then a third course of ten more dishes, and a subtlety. When this was all done, the sun was beginning to fade. Wafers and spiced wine were served, and spiced confections placed on the tables.

That was a feast!


*The EETS was founded in 1864 by F.J.Furnivall with the stated goal of putting into print all historical manuscripts available in English. It is through the EETS that many manuscripts from the Cotton Library became available to scholars and the public.

Fourth Meal

The Middle Ages had some serious opinions about meals, especially about how many there should be, and when they should be taken.

Breakfast
The need to break the all-night fasting in the morning was common among peasants and tradesmen who started their day early and got to work. It was not generally observed by the upper classes—perhaps because they slept later than peasants, and didn't get right to heavy work—and moralists frowned on it so strongly that some gentlemen felt the need to express shame for eating upon first rising.

Dinner
What eventually became the noon meal was considered the substantial meal of the day, a needed repast because of what you had been doing, and energy for the rest of the day.

Supper
From the word meaning "to sup," supper was served later and was simpler, often involving soup or sops: bread dipped in some tasty liquid.

...and that should have been enough. The sun would be down soon, and sleep would beckon. There was, however, a trend among the profligate that peeved the moralists but delighted the partakers.
If breakfast and little in-between meals drew the ire of moralists, how much more so the late meal after supper known as the reresoper. It was condemned unanimously by the church and heads of households as an unnecessary extravagance and an indulgence. Ranging from a full meal to just some snacks accompanied by lots of alcoholic drink, the reresoper was usually enjoyed by a few friends in a private room rather than the whole household in the hall, as was proper. Loud laughter, crude jokes, gambling, and flirting were some of the vices associated with this meal, which often dragged on until after midnight and resulted in many a hangover the next day. If it wasn't enjoyed by "heads of households" then one pictures the younger generation unwilling to follow a philosophy of "early to bed, early to rise," and instead staying up late and carousing. I cannot help thinking that Taco Bell's "Fourth Meal" marketing campaign serves exactly the same population.
